    My Easter Menu (with Recipes)

    This year, my wife and I are staying at home for a nice, simple Easter dinner-for-two. Below is a list of what I’ll be making. Although it is rather untraditional, it promises to be delicious. I’ve included recipes (or links to recipes) where applicable.

    Berry Berry Crisp [Recipe]


    Ingredients:

    6 cups frozen berries
    1/2 cup sugar
    1/4 cup flour
    2 cups granola
    2 tablespoons melted butter

    Method

    Preheat oven to 375°F. In a large bowl, gently toss together berries, sugar and flour then transfer to an ungreased (8-inch) baking dish; set aside.

    In a medium bowl, toss together granola and butter then scatter over berries in dish. Bake until top is golden brown and berries and their juices are bubbly, about 30 minutes.

    Nutrition

    Per serving (about 8oz/240g-wt.): 250 calories (45 from fat), 5g total fat, 3g saturated fat, 15mg cholesterol, 45mg sodium, 48g total carbohydrate (5g dietary fiber, 37g sugar), 5g protein

    Budget Bytes: Chili Garlic Breakfast Quesadilla

    CD Review: Joanna Newsom - "Have One On Me" ★★★★½


    Until this point, people have held two very distinct opinions of Ms. Joanna Newsom: love her or hate her. (For the record, I'm of the former opinion. My wife, the opposite.) Her voice seemed to be the major factor in this determination -- it, being a cross between Kate Bush and a Muppet being chased down a dark alley. With the upcoming release of "Have One On Me", however, I believe the naysayers are going to, well, change their tune.

    The primary reason for this is that Newsom has tempered her voice to a (slightly) more normal and acceptable range. Now, instead of Kate Bush meets a Muppet, it's more like Kate Bush meets Joni Mitchell. This doesn't mean that this album is an easy listen -- it's not! In fact, this is an album that is nearly impossible to get through in one sitting. The reason? It's contains over two hours of music spread over three CDs! But don't let that keep you from giving "Have One On Me" a try. It's the best of her career and deserves your attention -- though I'm pretty sure my wife is still going to hate it.

    My Mother's Buffalo Chicken Soup

    Buffalo Chicken Soup (serves 12)

    6 bunches green onions chopped
    6 cups diced cooked chicken
    9 stalks celery chopped
    1 ½ cups chicken wing sauce
    ¾ cup butter
    12 ounces Velveeta cheese
    ¾ cup flour
    1 ½ teaspoons cayenne
    3 cups milk
    1 ½ teaspoons celery salt
    1 ½ cups chicken broth
    1 ½ teaspoons garlic powder

    1) Sautee onions and celery in butter until tender (about 15 minutes)
    2) Stir in flour until smooth.
    3) Slowly add milk and broth.
    4) Add remaining ingredients and simmer, stirring occasionally until cheese has melted.

    Serve with celery and breadsticks.
